Dum Biryani

When it comes to South Asian comfort food, nothing quite matches the grandeur of a perfectly cooked Dum Biryani. It is not just a dish; it is an emotion shared by millions. Today, I am thrilled to share my absolute favorite Chicken Chatpati Dum Biryani Recipe. This version strikes the perfect balance between spicy, tangy (chatpati), and incredibly aromatic flavors, ensuring every single grain of rice is packed with taste.
If you have always found biryani making a bit intimidating or struggled with soggy rice and dry chicken, this foolproof, step-by-step recipe is exactly what you need to master the art of traditional dum cooking.
Let’s get cooking!
Ingredients You Will Need
For the Chicken Marination:
  • Chicken: 1 kg (Preferably bone-in pieces for the best flavor)
  • Yogurt (Dahi): 1 cup (Well-whisked)
  • Ginger-Garlic Paste: 2 tablespoons
  • Red Chili Powder: 1 tablespoon
  • Kashmiri Chili Powder: 1 teaspoon (For that beautiful vibrant color)
  • Turmeric Powder (Haldi): ½ teaspoon
  • Biryani Masala Powder: 2-3 tablespoons (Any high-quality brand)
  • Lemon Juice: 2 tablespoons
  • Plums (Aloo Bukhara): 5-6 pieces (The secret to that signature tangy taste!)
  • Salt: To taste
For the Rice:
  • Basmati Rice: 3 cups (Long-grain, soaked for 30 minutes)
  • Whole Spices (Sabut Garam Masala): 2 bay leaves, 3 green cardamoms, 1 black cardamom, 1 cinnamon stick, 4 cloves
  • Fresh Mint & Coriander: A handful
  • Salt: 3 tablespoons (The water should taste like sea water)
For Assembly & Layering:
  • Onions: 3 large (Finely sliced and fried until crispy golden brown - Biryan)
  • Cooking Oil/Ghee: 1 cup (Use the same oil used for frying onions)
  • Fresh Mint & Coriander leaves: For layering
  • Saffron or Yellow Food Color: Dissolved in 2 tablespoons of warm milk
  • Kewra Water: 1 teaspoon (For that authentic festive aroma)

Step-by-Step Cooking Instructions
Step 1: The Chatpati Marination
In a large mixing bowl, combine the chicken with yogurt, ginger-garlic paste, red chili powder, Kashmiri chili powder, turmeric, biryani masala, lemon juice, dried plums (aloo bukhara), and salt. Mix everything thoroughly with your hands, ensuring the chicken pieces are coated evenly. Cover and let it marinate for at least 1 hour (or overnight in the fridge) to let the flavors deeply penetrate the meat.
Step 2: Cooking the Chicken Gravy (Korma)
Heat oil or ghee in a heavy-bottomed pot. Add your marinated chicken into the hot oil along with half of the pre-fried crispy onions. Cook on high heat for 5-7 minutes until the chicken changes color and seals in its juices. Lower the heat, cover the pot, and let the chicken cook in its own juices and yogurt for 15-20 minutes until it is 80% cooked and the gravy becomes thick.
Step 3: Boiling the Perfect Basmati Rice
In a separate large pot, bring plenty of water to a rolling boil. Toss in the whole garam masala spices, mint leaves, coriander, and salt. Drain the soaked basmati rice and add it to the boiling water. Cook the rice until it is exactly 70-80% done (it should still have a slight bite to it, called ek kani). Drain the rice immediately in a colander.
Step 4: Layering and the Magical "Dum"
Now, let's assemble the masterpiece. In your main cooking pot, ensure the chicken gravy forms the bottom layer.
  1. Carefully spread the drained hot rice over the chicken gravy in an even layer.
  2. Top the rice with the remaining crispy fried onions, fresh mint leaves, and chopped coriander.
  3. Drizzle the saffron milk/food color and a few drops of kewra water over the surface.
  4. Seal the pot tightly with aluminum foil or a clean kitchen cloth, and place the heavy lid securely on top to trap the steam.
Place the pot on high heat for 5 minutes, then transfer it onto a flat tawa (griddle) on lowest heat setting for another 15-20 minutes of slow "Dum" cooking.

Serving Suggestions
Turn off the heat and let the pot sit covered for 5 minutes before opening. Gently fluff the layers from the side of the pot using a flat spoon to avoid breaking the long rice grains.
Serve this hot, steaming, aromatic Chicken Chatpati Dum Biryani alongside a cool mint raita and a fresh vegetable salad.
