Step-by-Step Instructions
Step 1: Prep the Meat and Veggies
Place your ground beef into a large mixing bowl. It is critical that the meat is relatively dry. Add your finely chopped red bell pepper and onion to the bowl. Pro-tip: Put the chopped onion in a clean kitchen towel or cheesecloth and squeeze out all its juice before adding it to the meat. Excess water will cause your kebabs to fall apart on the pan.
Step 2: Knead the Mixture
Add the minced garlic, red chili flakes, ground cumin, ground spices, paprika, and salt. Now, use your hands to knead the mixture vigorously for about 5 to 8 minutes, just like you would knead bread dough. You will notice the meat becoming sticky and paste-like. This breakdown of proteins is the secret to a perfect kebab texture that holds together perfectly.
Step 3: Rest and Chill
Cover the bowl with plastic wrap and refrigerate it for at least 30 to 60 minutes. Chilling the meat allows the fats to firm up, making the mixture significantly easier to shape and stick to the skewers.
Step 4: Shape the Kebabs
Dampen your hands with a little water to prevent sticking. Take a large handful of the beef mixture and mold it around a wide flat skewer (or double up thin skewers). Press and stretch the meat evenly down the skewer. To give it that authentic Adana look, use your thumb and forefinger to press down gently along the length of the meat, creating parallel finger indents.
Step 5: Cook on the Tawa
Heat a tawa, griddle, or grill pan over medium-high heat and brush it lightly with oil. Carefully lay your skewers onto the hot surface. Cook for about 2 to 3 minutes per side, turning regularly until a beautiful brown crust forms and the meat is cooked through. Avoid overcooking, as beef can dry out quickly.
Serving Suggestions
Serve these smoking hot kebabs over a bed of warm pita or lavash bread. Pair them with grilled tomatoes, charred green chilies, and a refreshing sumac-infused red onion salad.
