Khutti  Meethi Chutney Ingredients:

Plum 1/2 cup
cumin powder 1/2 tsp
Black Salt 1 tsp
Chaat masala 1 tsp
Jaggery 2-3 pieces.
Ginger powder 1/2 tsp

🍳 Step-by-Step Instructions
Step 1: Prepare the Perfect Dough
  1. In a large mixing bowl, combine the Semolina (Suji), All-Purpose Flour (Maida), and Salt. Mix the dry ingredients thoroughly.
  2. Slowly add warm water bit by bit and begin kneading. You need to form a very stiff and hard dough.
  3. Cover the dough with a clean, damp cloth and let it rest for 20 to 30 minutes. This allows the semolina to absorb moisture and swell perfectly.
Step 2: Rolling and Cutting the Puris
  1. After resting, knead the dough again for 2 minutes until smooth. Divide it into smaller portions.
  2. Roll out each portion into a very large and exceptionally thin flatbread (roti).
  3. Use a round cookie cutter or a sharp small lid to cut out small circles for your puris.
  4. Cover them in wed cloth and leave them for 15 minutes sothat they will never dry at all.
Step 3: Deep Frying Secrets
  1. Heat plenty of oil in a deep frying pan or wok on medium-high heat. The oil must be very hot before frying; otherwise, the puris will not puff up.
  2. Slide one puri into the oil at a time and gently press down with your frying spoon. This will help it puff up instantly like a balloon!
  3. Flip and fry until both sides turn beautifully golden brown and completely crunchy. Remove and drain excess oil.
Step 4: Making the Spiced Sour Water (Khatta Pani)
  1. Soak the Tamarind into the bowl with water for 30 minutes before. You can soak dry plums too about 1/2 cup.
  2. In a large serving bowl, mix the tamarind without water, boil it just one time, then add black salt, chaat masala, cumin powder, and plum without water. Mix well, and your delicious chatpata water is ready! When it cold down a bit add cold water as you like and refrigerate it for an hour before serving it.
Making of Chutney:-
In a sauce pan, add jaggery with 1 cup of water. add all spices and tamarind with plums.         Now cook them until thick consistency your khatti meethi chutney is ready.
